Kielbasa and Kraut Skillet

There are many many recipes utilizing both kielbasa and sauerkraut, and I’ve tried a few and liked them all.  When I saw another in the “Family Circle Hometown Favorites Volume 6”, I decided to try it as well:

Kielbasa and Kraut Skillet

4 servings, 25 minutes start to finish

1 lb. cooked kielbasa, bias-sliced into 2-inch pieces

1 small red onion, thinly sliced

1 15-oz. can sauerkraut

1 Tbsp. coarse-grain brown mustard

1/4 tsp. caraway seeds

1/4 tsp. salt

1/4 tsp. black pepper

In a large skillet, cook kielbasa and onion until onion is just tender.  Stir in undrained sauerkraut, mustard, caraway seeds, salt, and pepper.  Cook, covered, over medium heat about 10 minutes or until heated through.

Sounds simple enough, right?  Here is my interpretation of the ingredients:  2013_1012October20130014  And my final result:  2013_1012October20130018  A few of my mom’s home canned green beans and some fried potatoes with onions rounded out our meal.  The prevailing flavor is sauerkraut, but the mustard makes it’s presence known in the background.  If you like those flavors (and I do), you’ll probably enjoy this quick and easy dish.
